If there is something that is the greatest enemy of roasted coffee besides heat and light, it is air. Roasted coffee beans readily oxidize in the presence of air, which alters their taste profile and causes them to lose their aroma. On the other hand, during roasting, a significant amount of carbon dioxide gets trapped in the beans, gradually escaping afterward. This is why it's necessary to let the coffee rest after roasting before preparing it. Both of these issues can be elegantly solved by a vacuum canister.
